Tomato Soup Grill Style

What you need:

  • 6 large tomatoes, quartered
  • 3 cups chicken or vegetable broth
  • 1 cup basil, finely chopped
  • 1/2 cup shredded Cheddar Jack cheese
  • 6 tablespoons olive oil, divided
  • 2 tablespoons crushed shallot
  • 1 tablespoon crushed garlic
  • Salt and ground black pepper to taste
  • French bread (optional)

Place the tomatoes in a bowl. Add 2 tablespoons of olive oil and season with salt and pepper. Toss to coat. Place on grill tray and cook on a pre-heated grill over medium heat until charred, about 5 minutes per side. Cool for a few minutes then puree in a blender. Set aside.

Heat 2 tablespoons olive oil in a sauce pot and cook the shallot and garlic until they begin to caramelize, about 3 minutes. Add the grilled tomato puree and the basil to the pot and cook for 3 minutes more. Reduce the heat and pour in the chicken broth. Simmer for 30 minutes, uncovered.

While waiting for the soup to cook, slice French bread into 1-inch cubes and toss in the remaining olive oil. Place in a sheet pan and toast in the oven.

When the soup is ready, portion it into bowls. Top each bowl with croutons and sprinkle with Cheddar Jack cheese.

Grilled Cinnamon-Coated Apple Bites

What you need:

  • 2 large apples, cored and sliced into 1/4-inch thick pieces, with skin on
  • 1/2 cup purified water
  • 1/4 cup freshly-squeezed lemon juice
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • Pinch of salt

In a large bowl, mix together the water and lemon juice. Add the apple slices to the bowl (this will help prevent the apples from browning while in contact with cold winter air). In a separate bowl, combine the brown sugar, cinnamon and salt. Set aside.

Arrange the soaked apples in a grill rack and cook on a pre-heated grill over medium heat for 6 to 8 minutes per side, turning once. When ready, place the grilled apples in a serving dish and sprinkle with the brown sugar and cinnamon mixture. Best served warm with a scoop of vanilla ice cream.
